Alzina Toups' Oyster Dressing
Ingredients:
2 tablespoons butter
1 lb ground chicken gizzards
1 large yellow onion chopped
2 ribs celery chopped
1 large bell pepper chopped
2 cloves garlic chopped
1 quart oysters in their liquid chopped
1 beef bouille cube
1 teaspoon kitchen bouquet
½ cup chopped parsley and green onions
¼ teaspoon sugar
salt and pepper to taste
cooked rice
Directions:
Saute first 7 ingredients. Stir in oysters and liquid and
remainder of ingredients except rice. Cook for 1 hour adding
stock as needed (beef or chicken). Stir in desired amount of
rice. Serve hot. Dressing should not be too wet or dry.
