Jim's Clam Chowder

Ingredients:
1 large Yellow Onion
1 lb. Bacon
10 Cans of Chopped Clams
5 lbs. Red Potatoes
½ gal. ½ & ½
½ gal. 2% Milk
4 tablespoons butter
About ¼ cup Basil
Corn Starch, if needed, to thicken
You can also add a can of creamed corn (optional)

Directions:
Brown your bacon and chop it up.  Chop up onions, bacon and potatoes and throw everything in a pot full of milk and half and half.  Be sure to add the juice from the cans of clams. Add basil to top.  Stir  (with a large wisk) during first 15 minutes, then occasionally for the next 2 ½ hours.  Be careful not to burn the bottom.  Makes about 2 gallons. Serve with Tabasco and French Bread.  Makes a great winter meal!
