Captain Kirk's Corn Soup
Ingredients:
1 cup chopped onions
1 cup chopped celery
1 cup chopped green pepper
3 cloves garlic (minced)
1 cup olive oil
1 can tomato paste
1 can tomato sauce
2 cans rotel
3 lbs salt pork (diced)
2 lbs andouille (diced)
1 lb tasso (diced)
5 bay leaves
4 cans whole kernel SWEET corn
2 cans cream style corn
8 ears of corn
Salt and Pepper to taste
Directions:
Combine onions, celery, green peppers, garlic and olive oil.
Saute' until lightly browned. Add tomato paste, tomato sauce and
rotel. Saute' mixture for 20 minutes. Add salt pork, andouille,
tasso and bay leaves. Saute' mixture for 10 minutes. Put mixture
in a soup pot. Add water and bring to a boil. Add ALL CORN to the
soup and boil for 20 minutes. Serve with hot french bread or
saltine crackers.
For a twist, add 3 lbs. of small peeled shrimp.
