Dianna Cheramie's "Kisses"
Ingredients:
2 cups sifted flour
½ cup sugar
2 teaspoons baking powder
¼ teaspoon salt
½ cup milk
1 teaspoon pure vanilla extract
2 eggs
Directions:
Sift and mix flour, sugar, salt and baking powder into a mixing
bowl. Beat eggs and mix with milk and vanilla in a separate bowl.
Add liquid ingredients to dry ingredients and mix (by hand) until
well incorporated. Heat 6 cups of vegetable or peanut oil to 375
degrees. Dip two teaspoons into the hot oil and scoop one
teaspoon of batter and drop into hot oil, using the other
teaspoon to shape batter into a ball. Deep fry until golden
brown. Remove kiss to a pan lined with paper towels or a drip
rack. Test the doneness of the kiss by breaking in half. If the
center not fully cooked, reduce heat and continue testing
individual kisses until desired doneness is achieved. Children
love them while still gooey in the center. Serve with powdered
sugar or Steens Syrup, or your choice of jam, jelly or
preserves. I prefer them without any accompaniment. This is a
breakfast recipe or afternoon snack.
