Dianna Cheramie's Hot Egg Nog

Ingredients:
1 quart whole milk
3 egg yolks
1/3 cup sugar
¼ teaspoon salt
3 egg whites
3 tablespoon sugar
½ cup bourbon, brandy or rum
freshly grated nutmeg

Directions:
Scald milk. Beat egg yolks with 1/3 cup sugar until thoroughly blended. Add salt and milk and stir well. Return mixture to medium heat and cook, stirring constantly, until mixture thickens. Do not boil. Remove from heat.

Beat egg whites until foamy. Add 3 tablespoons sugar gradually, beating until stiff peaks form. Fold beaten egg whites into hot milk mixture. Blend in liquor of choice and serve hot. Sprinkle freshly grated nutmeg to taste on top of each serving. Makes eight sevings.
