Jerry Braud's Turtle Soup
Ingredients:
2 lbs turtle meat
1 gal water
2 cloves garlic
1 tsp lemon juice
1 bay leaf
1 cup oil
1 cup flour
1 cup chopped onions
2 stalks diced celery
4 tbsp tomato paste
salt and red pepper to taste
6 hardboiled eggs, cut in half
dry sherry wine
Directions:
Boil turtle meat in water. Add bay leaf, garlic and lemon juice.
Salt and pepper to taste. Boil until turtle meat is tender (about
90 minutes). Heat oil in iron skillet. Add flour and make a dark
brown roux, stirring constantly on medium high heat. Turn off
heat and add onions, celery and tomato paste, stirring
constantly. Restore heat and cook for 15 minutes. Add mixture to
soup and cook for 45 minutes. Serve over the eggs. Drink Sherry.
