Jon's "Jon"balaya (Jambalaya)
Ingredients:
1 onion
1 bunch green onions
2 cups of rice
2 cups of peas (frozen or canned)
2 cans of chicken or turkey gravy
1 10lb bag of chicken thighs
cajun seasoning
Directions:
Cook rice. Boil chicken until fully cooked. Remove skin &
debone chicken into bite-size pieces. Saute both onions. Bring
peas to a boil in gravy. Combine all ingredients and seasoning
with chicken in one pot. Stir slowly. Reheat unless rice is
steaming hot. (Key to recipe is gravy.)
