Captain Kirk's Oyster Dressing
Ingredients:
1 cup diced onions
½ cup diced celery
½ cup diced green pepper
½ cup green onions
2 cloves crushed, chopped garlic
1 quart fresh shucked oysters with oyster liquor (oyster liquid)
1 cup chicken livers
4 cups long grain, parboiled rice
8 cups chicken or turkey stock
salt and pepper
Directions:
Saute onions, celery, green pepper and garlic in a mixture of
butter and olive oil until lightly browned. Simmer oysters and
chicken livers in oyster liquor until firm. Remove and chop into
coarse pieces. Reserve remaining liquid, if any is left. Put
mixture aside. Cook rice in stock and put aside. In a large
mixing bowl, combine all cooked ingredients. Add green onions and
mix well. Place in a shallow, buttered covered baking pan or
casserole dish. Place in a preheated 350 degree oven for 20 to 30
minutes. Serve hot. Serves 16 yankees or 8 cajuns.
