Linda's Eggplant Dressing
Ingredients:
3 lbs. Ground Chuck
2 med. onions (chopped)
2 eggplants (peeled & sliced)
3 - 4 cups of rice
salt
red pepper
garlic powder
Directions:
Brown ground meat then drain. Season with salt, red pepper
and garlic powder. Add chopped onion and cover, stir
often. In seprate pot boil eggplant for 5 - 10 minutes,
then let drain well.. After onions start to cook, add
eggplant to ground meat. Cook on low fire for at least
30-40 minutes. Eggplant should basically dissolve into
mixture. If meat starts to dry out add a about ½ cup of water at
a time (about 2 - 3 times). You want the meat to be very
moist. After cooking for 30-40 minutes, add cooked rice,
BUT add a little at a time. It will probably take 3-4 cups
of rice. Serve hot.
