Miss Jackie's Broccoli & Corn Casserole
Ingredients:
3 10-ounce packages frozen chopped broccoli, thawed and squeezed
dry
3 17-ounce cans cream-style corn
Salt and freshly ground black pepper to taste
1 roll finely crushed Ritz cracker crumbs
6 tablespoons butter or margarine, divided
Directions:
Preheat oven to 375 degrees F. Grease a 9" x 13"
baking dish; set aside. Place half of the broccoli into
prepared dish. Top evenly with the cream-style corn,
sprinkle evenly with salt and pepper, top evenly with half of the
cracker crumbs and dot with half of the butter or margarine.
Repeat layering once more ending with cracker crumbs and the
butter or margarine pieces. Cover and bake at 375 degrees F for
30 minutes. Uncover and bake for another 5 minutes.
Serve immediately from casserole. Yield: 12 servings.
