Miss Jackie's Sweet Potato-Pecan Bread
Ingredients:
2 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 teaspoon finely grated lemon peel (orange peel may be
substituted)
1 cup fresh or canned mashed sweet potatoes
1 cup granulated sugar
1 teaspoon vanilla
2 eggs or 1/2 cup thawed or refrigerated egg product
1/2 cup whole or low-fat milk
2 tablespoons vegetable oil
2 tablespoons apple or orange juice
1/4 cup chopped toasted pecans
Butter, margarine or cream cheese for serving
Directions:
Preheat oven to 350 degrees F. Grease and flour a 9
by 5-inch loaf pan; set aside. Combine the flour, baking powder,
baking soda, salt and spices in a large bowl until just
blended. Stir in the remaining ingredients or until just
blended. Pour batter into prepared loaf pan and bake for 1
hour or until toothpick inserted in center of bread comes out
clean. Remove from pan after a few minutes and cool completely on
wire rack. Slice the next day and serve with butter, margarine or
cream cheese, if desired. Yield: 1 loaf.
