Sean's Cajun/Irish Gumbo

Ingredients:
2 4-5 lbs. Boneless Legs of Lamb
2 Cans Italian Stewed Tomatoes
2 Cans Guinness Stout Beer
2 Giant spoonfuls “Beef Base”
2 Huge dollops DiJon Mustard
24 large Red Potatoes
2 lbs baby carrots
2 White Onions
1 fresh Rosemary
Olive Oil
Flour
Spice it up with anything but garlic (garlic does not taste good in this dish).

Directions:
Pour Olive oil in pan.  Chunk meat into spoon size pieces, roll in flour and then brown the meat (15-20 min). Add 8 cups water (with beef base to meat). Pour in Guinness Beer. Add Italian Stewed Tomatoes. Chop onion in eights and toss ‘em in. Add lots of DiJon Mustard (use plenty). Add Rosemary. Bring to a boil then simmer, covered, for two hours. Add Potatoes and carrots, for one more hour. Remove grease and eat.  You can cut the portions in half if you want to make one large pot.
